Welcome to our staff stories!

We want to shout about our incredible staff and all they bring to the restaurant, without them we wouldn’t have anything! We will be featuring a few people from our wonderful team each month and talking a little about what they do for A Rule of Tum.


 

CONNOR

/ Sous Chef / the Bookshop

Meet Connor, Sous Chef at The Bookshop in Hereford.

Connor started working at The Bookshop in June 2021 and quickly became a core part of the kitchen team. 

When asked about what he likes about working at The Bookshop he mentioned that he loves the open kitchen;

“I love the fact that the customers can see you working, see that you’re making the food right there, and also that we can look out and see the restaurant, get a feel for the vibe of the evening”

Connors current favourite dish is the Duck paired with Buttered Mashed Potato and Spring Cabbage (see photos below)

He’s looking forward to the future of The Bookshop, working with exciting new cuts of meat and processes to take the restaurant to the next level and really set it apart.

 
 

 

TOM

/ bar manager / The Bookshop

Tom has been with The Bookshop since 2018 and is now the bar manager responsible for all of the wonderful cocktails that we have in the restaurant, as well as outside in the Yard.

Tom shares with us one of our new cocktails:

BASIL SMASH

INGREDIENTS:

50ml Ludlow No.1

25ml Lemon Juice

25ml Sugar Syrup

6 Basil Leaves

METHOD:

Muddle basil leaves with lemon juice in the bottom of a shaker. Add gin and sugar and shake with ice. Double strain over ice into a tumbler.

GARNISH:

Basil sprig.

 

 

LIINA

/ HEAD Barista / The Bookshop

Liina joined the team when The Bookshop reopened after its refurbishment in September 2019 and has been our Head Barista ever since.

When asked about what she likes working here Liina said that she loves the freedom and trust she has to do the job she loves and to get to showcase good quality specialty coffee to the people of Hereford. For her, this is worth the 90 minutes drive each way from Cwmbran to get to work.

Her favorite coffee is a Kenya Peaberry made with a coffee siphon (vacuum coffee maker)

You can see Liina most days in The Bookshop making stunning coffee, make sure to say hi next time you are down!
